Souvlaki is one of the basic delicacies of Greek gastronomy whose recipe can be found in Greek Antiquity.
It is firstly referred in Homeric Epics, when Achilles is appear to cook pieces of meat in cinder, whereas, according to Athineos – ancient Greek biologist and gastronomist – in his work “Deipnosophistae” ,
Hegesippus in his cook guide by the name “ Opsartytiko” refers to a dish by the name “ Kandavlos ” that contained roasted pieces combined with a small wooden spit made of cane ( Kalamaki in Greek ) and that’s why in South Greece someone can order it as Kalamaki
